Apricot Balsamic Chicken

Dinner was supposed to look like this:

NAILED IT!  Psh.

So listen, my New Year’s goals are always pretty much the same.

1) Be more mindful of how money is being spent
2) Cook at home more
3) Live a more active lifestyle

I wouldn’t say I live up to those standards all day, every day.  I kind of go through phases and always leave plenty of room for improvement.

As soon as vacation was over and the new year really kicked into gear, I wanted to get the goals rolling again. About 7 hours in, I went shopping and failed at #1 right off the bat.  But I also went for a brisk walk and cooked dinner at home.  So two outta three ain’t bad!  Just because the dinner looked inedible doesn’t mean I didn’t try.  And it honestly tasted pretty good.  It’s just one of those recipes where you have to stand at the stove and saute for awhile.  And Stevie quickly reminded me why I haven’t tried doing that in about 3 months.  Between getting his hands too close to the stove, and letting me know he was hungry about 78 times, and locking himself in the bedroom, and trying to pull the iPod off the counter, and constantly trying to give me his shoes (why?)…  It was just difficult.  A 25 minute prep time turned into an hour and half.

Guess I better stick to casseroles or crock pots if this goal #2 is going to work in the slightest.

I need more quick and easy recipes.  This one might technically be considered quick and easy by most, in our house that is not the case.  I’m talking 10-15 minutes yo.  Please help!

    Takes about an hr to go pack up. But the food looks like the one in the first picture.
    Tastes good too. Most take about 10 min to prepare and 10-20 to cook.

  2. Love the randomness of the shoes! My go-to easy recipe is grabbing some chicken breasts, making a slice through the middle of each one, put in monterey jack cheese & a whole green chili (i usually do canned), and put the chicken in a baking pan. Then if you are cheese lovers top with a little grated monterey, put tomato slices on top, sprinkle with seasoning salt & bake.

  3. Maybe Stevie brought his shoes because he saw how nice the dinner looked, and wanted to go out to have dinner 😀 However, I believe it tasted good. 🙂
